Poached rainbow trout with, a salad of radish, apple and herbs with aioli

Roasted chicken breast stuffed with spinach and ricotta served with caponata, crispy pancetta and a basil sauce
Roasted fillet of salmon with Niçoise vegetables, marjoram dressing, tapenade and charred baby gem
